What better way to celebrate any occasion than with a magical, color-changing toast? You may have already seen or heard about the Butterfly pea plant and if you haven’t, you’re in for a special treat. Before we dive straight into the recipe, here’s a bit of a backstory of these beautiful plants.



The Butterfly pea plant, also known as Asian pigeonwings are flowering vines native to the tropical regions of Southeast Asia. The vines produce gorgeous indigo blue and violet wildflowers that have long been cultivated for hundreds of years due to their many beauty and wellness benefits. Loaded with antioxidants, the Butterfly pea plant helps boost your immune system, slows down premature aging, and keeps your skin clear and radiant. 

These little flowers are not only used for cooking, but they’re also harvested, dried and made into an herbal tea. When steeped, these flowers produce beautiful hues of blue and when there’s a change in the water’s pH level (adding lemon juice/lemonade), the colors transform from a deep blue to rich shades of purple and magenta. 


What’s it taste like?

Butterfly pea flowers have no distinct taste but “earthy” would be the best word to describe its flavor.  Since it doesn’t have much flavor, it’s common to add sweeteners, like sugar or honey but if adding sweeteners to your tea isn’t your thing, you can definitely do without it.
